This event is a celebration of Cebu’s rich culinary heritage, featuring a collaboration between two culinary maestros from Megaworld Hotels and Resorts: Chef Kit Carpio of Savoy Hotel Manila and Chef Coke Semblante of Savoy Hotel Mactan Newtown. Together, they bring the vibrant flavors and diverse cuisine of Cebu to the heart of Manila.
Flavors of Cebu
The Cebu Food Festival promises a gastronomic journey through the delectable variety of flavors of Cebu. Guests can indulge in a delectable array of traditional Cebuano dishes, including humba, a rich, sweet-savory flavor featuring tender pork belly with a delectable sauce; balbacua, a rich and gelatinous broth made from slow-cooked beef parts; manok sa kawayan, chicken and other ingredients slowly cooked inside a bamboo stalk over an open fire; linarang, fish soup or seafood stew with flavorful broth and various types of fish or seafood; and monggo with chicharon, a comforting blend of mung beans, pork, and crispy chicharon, highlighting each ingredient’s contrasting textures and flavors. Every dish is crafted with the precision and passion of the two renowned chefs, reflecting the rich culinary traditions of the Queen City of the South.
Another unique feature of the festival is the special pungko-pungko basket, a serving of deep-fried delights such as lumpia (spring rolls), ngohong (vegetable and meat spring rolls), fried chicken feet, fried isaw (intestines), and fried pork skin (chicharon), served with a selection of condiments like vinegar with chili (sukang bisaya), soy sauce, or spicy sauce. This offering brings the authentic street food experience of Cebu City’s famed dining stalls that offer a variety of flavorful snacks perfect for sharing, locally known as “Pungko-Pungkoan” or “Carinderia,” to the elegant ambiance of Savoy Hotel Manila. Designed to serve four, the Pungko-Pungko Basket allows guests to enjoy a communal and festive dining experience.
Collaborative effort
The event is orchestrated by the dynamic leadership of general managers Den Navarro and Jot Chiongbian of Megaworld Hotels and Resorts, following the success of their Ilonggo Culinary Treasures Event in March 2024. Their vision is to highlight the culinary treasures of the southern regions of the Philippines with the help of the two remarkable chefs, with the Cebu Food Festival exemplifying their dedication to promoting regional flavors.
